Our Story
We’re a farming family from the beautiful high country of Queensland’s Granite Belt, where the air is crisp, the soil is rich, and the seasons shape everything we grow.
At Budburst Australia, we craft small-batch, hand-made vinegars infused with tree-ripened apricots and blood plums from our own orchard. Each batch is steeped slowly in local wine vinegar for ten weeks, then hand-filtered and bottled right here on the farm — no shortcuts, no concentrates, no imported ingredients. Just honest flavour, made the old-fashioned way.
Our vinegars are vibrant and versatile — the kind of thing you’ll reach for again and again. Drizzle them over a salad, splash into a cocktail, or top up with soda water for a refreshing afternoon drink. Add a few drops to sparkling wine or a G&T for a twist, or pour a little over oysters, baked fruit, or pickles for that perfect extra zing.
No two batches are ever the same. Like wine, each one reflects the soil, the seasons, and the unpredictable moods of our cool mountain climate. It’s what makes every bottle uniquely ours.

The Farm
Our orchard sits high on the southern Granite Belt plateau, in the old fruit-growing and topaz-fossicking country of Severnlea. It was first planted in 1918 and quickly became known for producing some of the region’s finest stone fruit — even chosen to present a box of fruit to Queen Elizabeth II during her 1954 visit to Australia (and rumour has it, another box made its way to Buckingham Palace).
Today, the orchard is cared for by the Fawdon family, who took over in 1997. After decades of growing and harvesting fruit for market, we started Budburst as a way to capture the true flavour of our fruit and share it year-round — while embracing the changing seasons and challenges that come with farming life in the high country.
At 870 metres above sea level, our trees thrive in cool winters and warm, unpredictable summers — from rolling thunderstorms to dry spells — all of which influence the taste and sweetness of each year’s crop. Fertile soils, clean water, and a thriving population of birds and pollinators keep the orchard full of life and promise.
We’re also planting new rows of lavender and other fragrant flowers for essential oils and culinary use — another step in our mission to grow, create, and share beautiful things from this clean, green, and generous land we call home.
