  • Characteristics: The combination of vibrant strawberry and apricot flavours is complemented by the subtle and comforting notes of vanilla bean, creating a well-balanced and indulgent taste.
  • Making the Shrub: When we started our Budburst adventure our first two products, were the black plum infused vinegar and our golden apricot infused vinegar. Though we promoted the making of shrubs to customers, it was at Stanthorpe’s own Strawberry festival that we produced our first shrub. Strawberry and vanilla bean infused into apricot vinegar became our first ever shrub. The fresh local strawberries and fresh Vanilla beans make a great match, then add the apricot vinegar and you have a wow product.
  • Suggested Uses:-
  • Cocktails: Craft a Strawberry Apricot Vanilla Bean Daiquiri or a Vanilla Berry Fizz. Add to a sparkling wine.
  • Mocktails: Create refreshing non-alcoholic beverages like a Strawberry Apricot Vanilla Sparkle. Add to lemonade or just soda.
  • Culinary: Use as a dessert drizzle, mix into yogurt, or create a unique glaze for pastries. Use as a sweet dressing for salads


Miss Ruby

Ingredients:

  • 30ml Ink Dry Gin
  • 15ml Chambord
  • 15ml Crème de Violette
  • 20ml Fresh Lime Juice
  • 15ml Strawberry, Apricot & Vanilla Bean Syrup (adjust to taste)
  • Soda Water, to top
  • Dried Rose Petals, to garnish

Method:

  1. Add the gin, Chambord, Crème de Violette, lime juice, and syrup into a cocktail shaker filled with ice.
  2. Shake well until chilled.
  3. Strain into a chilled highball or stemmed glass filled with fresh ice.
  4. Top with soda water and gently stir to combine.
  5. Garnish with dried rose petals for a delicate floral finish.

Serving Suggestion:

Best enjoyed on a warm afternoon — light, floral, and elegantly balanced with a touch of berry sweetness.

 

Miss Ruby (Mocktail)

Ingredients:

  • 30ml Fresh Lime Juice
  • 20ml Strawberry, Apricot & Vanilla Bean Syrup
  • 60ml Cloudy Apple Juice (or white grape juice for a lighter body)
  • 60ml Soda Water
  • Dried Rose Petals, to garnish

Method:

  1. Add lime juice, syrup, and apple (or grape) juice to a cocktail shaker with ice.
  2. Shake gently to chill and blend the flavours.
  3. Strain into a chilled stemmed glass or highball filled with ice.
  4. Top with soda water and stir lightly to combine.
  5. Garnish with dried rose petals for a delicate floral finish.

Serving Suggestion:

A vibrant and fragrant mocktail with soft vanilla notes and a hint of fruit — light, romantic, and refreshingly elegant. Perfect for afternoon teas, celebrations, or alcohol-free indulgence.
