  • Flavour Profile: A refreshing blend of our black amber plum, locally made red wine vinegar with the gentle flavour of our handpicked English lavender variety, called Pacific blue.
  • Characteristics: Delicately floral with a rich, fruity undertone, striking a perfect balance between the soothing lavender and the juicy plum.
  • Making the Shrub:  Born out of severe drought came the idea of the plum and lavender shrub, and the resulting decision on which lavender varieties to plant after the rains had come, we chose a culinary lavender. We wanted to utilise what we were already growing on the farm as well as product derived from local growers.
  • It was an inspired selection to add the delicately floral flavours of lavender to the plum infused Vinegar.
  • Suggested Uses:-
  • Cocktails: Elevate your mixology with a Lavender Plum Martini or a Plum-Lavender Gin Fizz.
  • Mocktails: Create a refreshing Lavender Plum Sparkler or a Plum Lavender Lemonade
  • Culinary: Use as a glaze for roasted meats, drizzle over desserts, or incorporate into vinaigrettes for salads.

 

Native Spritz

Ingredients:

  • 45ml Bush Apple Gin
  • 15ml Elderflower Liqueur
  • 20ml Fresh Lemon Juice
  • 20ml Black Plum & Lavender Syrup
  • Soda Water, to top
  • Fresh Raspberries on Skewer, to garnish

Method:

  1. Add the Bush Apple Gin, elderflower liqueur, lemon juice, and Black Plum & Lavender Syrup to a cocktail shaker with ice.
  2. Shake gently to chill and blend the flavours.
  3. Strain into a chilled wine or highball glass filled with ice.
  4. Top with soda water and lightly stir to combine.
  5. Garnish with a raspberry skewer for a bright, native-inspired finish.

Serving Suggestion:

A refreshing, aromatic spritz that celebrates native botanicals and floral elegance — perfect for warm afternoons or as a signature welcome drink.

 

Native Spritz (Mocktail)

Ingredients:

  • 60ml Native Plum or Berry Juice (or cranberry for colour balance)
  • 20ml Fresh Lemon Juice
  • 20ml Black Plum & Lavender Syrup
  • 60ml Soda Water
  • 30ml Tonic Water (optional, for a touch of botanical bitterness)
  • Fresh Raspberries on Skewer, to garnish

Method:

  1. Add the juice, lemon juice, and Black Plum & Lavender Syrup to a shaker with ice.
  2. Shake gently until well chilled.
  3. Strain into a wine or highball glass filled with fresh ice.
  4. Top with soda water (and tonic if using).
  5. Stir lightly to combine.
  6. Garnish with a raspberry skewer for an elegant finish.

Serving Suggestion:

A vibrant and refreshing mocktail — rich in plum and floral notes, balanced by citrus brightness and a sparkling lift. Perfect for guests seeking sophistication without the spirits.
